Candied ginger is like marmite: you either grow up with it and love it or can't quite understand the fuss. We belonged to the latter category until we met our current producer. Their gingers are soft, moist, mild and have almost no fibres because they only use young ginger of the Australian variety and grown in Australia. The result is a complete opposite from the common and cheaper Chinese ginger, fibrous, chewy and harsh that burns half of your taste buds in one bite. The ginger we use is also less sweet: diced, candied in syrup and slightly dusted in icing sugar, not covered by a thick crust of sugar crystals. We finish it by coating it twice in a strong 70% dark chocolate.
