Since creating the famous sea salted caramels for Gordon Ramsay’s menu at Claridges, Gerard has continued researching ingredients to compliment his original recipe. Only the most successful samples, dutifully vetted by volunteer salted caramel fans, are allowed on our shelves, numbered by the timeline of their conception.

N° 9 is a zesty salted caramel infused with fresh lemongrass. Aromatic lemongrass often helps balance the five fundamental flavours of Thai cuisine: spicy, sour, sweet, salty and bitter. It rounds out our salted caramel chocolate balls with its fragrant zesty notes.
