Lumis, dark and deeply scented, are ripe limes boiled in salt water and sun-dried often used to perfume rice with tart and earthy flavours. Persian cooking is based on the belief that the food we consume is weakening or strengthening to the human character. Therefore a healthy diet that includes a wealth of exotic fruits and spices creates unusual powers making us gentle and noble. To extract the lumis’ enticing aromas, we crush them and let them infuse for several days in a tank of molten milk chocolate.
