Located in the valley of Casbahs, Taliouine is the capital of Moroccan saffron, one of the finest in the world. White chocolate brings out the hay-like fragrance of saffron and its rich golden yellow hue. We conche and refine cocoa butter, cane sugar, milk powder and saffron stigmas for hours. We work each batch until the saffron and chocolate melt into a preciouse bittersweet golden bar. |

At the beginning of winter, before sunrise, women hand cut the stigmas from wild flowers growing on the mountain side. An incredible 170,000 of these flowers and 60 man days are needed to gather 1kg of saffron, making it the most expensive spice in the world.
