Sweet milk chocolate and spicy Indian masala chai tea leaves conched and refined at our atelier in Kent.
Tea plants have grown wild in the Assam region since antiquity, but historically tea was used as a herbal medicine rather than a tasty beverage. Many masala chai spiced teas, mixtures of Assam tea and Indian herbs and spices are derived from Ayurvedic medical texts. This masala chai, typically from the North West coastal state of Gujarat, has a lively blend of cardamom, ginger, black pepper and cinnamon. To mimic the sweet milky drink, we conche this tea with ground cocoa beans, cane sugar, dried milk from the British Isles. The TCT (or Crush, Tear, Crush) mechanical production method of this tea and the combined refining with cocoa beans create a bold, tannic flavour that balances the sweet, creamy and spicy notes.
