This caramel sauce contains a blend of sugars and double cream enhanced by untreated grey salt. Cooking this caramel sauce (which we do every other day) requires care and precision for it not to expand and shoot up like a hot caramel spring. Our salt, harvested by hand from clay marshes since medieval times, holds a wealth of minerals and trace elements that enrich and balance the caramel taste. It is the balance of flavours - sweet, saline and mineral that makes our sauce so irresistibly desirable.
